Easy pickled onions

these make a delicious topping, especially for Mexican food. I made some up for my son’s birthday party where we had nachos and tacos.

Ingredients

  • 3 medium red onions
  • 2 cups of water
  • 1 cup White vinegar
  • 1 cup Apple cider vinegar
  • 2 Tbsp sugar
  • 1 tsp salt

Directions

  1. cut the onions into thin slices.
  2. stuff them tightly into the jars
  3. heat all other ingredients on the stove until hot.
  4. pour over onions, and cover with lid.
  5. store in the refrigerator- they are best after Atleast 24 hours in the fridge.
